Healthier alternatives for a flipping good Pancake Day
With Pancake Day upon us, we want Shropshire residents to have a flipping good time on Shrove Tuesday.
In kitchens across the county people will be making yummy treats in the age-old tradition.
Pancakes can be a good source of protein and fibre. However, it’s worth watching the calories that come when adding extras.
Elizabeth Bainbridge is NHS Shropshire Clinical Commissioning Group’s (CCG’s) resident Dietician and she says you can enjoy a guilt-free Pancake Day by swapping sugar and chocolate spreads for healthier alternatives.
Elizabeth said: “Pancakes can be a great source of energy, protein and nutrients. The problem comes when you add extra stuff in so it’s something to be mindful of if you’re trying to eat healthy.
“You can try swapping stuff like sugar, cream and syrup for things like natural yoghurt and fresh berries. Or, alternatively you could try a savoury pancake and add a little bit of soft cheese or even some pesto and roasted vegetables for something a little bit different.
“The way you cook your pancakes can also make a big difference. If you are using butter and oil, remember a little goes a long way. Alternatively, you can use low-calorie cooking oil sprays as you only need to use a little bit and it gets good coverage in the pan.”
Elizabeth also has an easy, healthy and delicious recipe that you can try for something a bit different – Banana Oat Pancakes.
The gluten free recipe can be made in minutes and served with extra fresh fruit for an added health-kick.
Elizabeth added: “I have made these before and they’re really tasty and easy to make. You get lots of nutrients from the eggs, bananas and oats and it’s also gluten-free. You can also add some fresh berries, or – if you’re feeling a little bit naughty- some syrup as well.”
Easy Banana Oat Pancakes
- 2 bananas
- 2 eggs
- ½ cup rolled oats
- ½ teaspoon baking powder
- pinch of salt
- fresh fruit of your choice, to serve
- In a blender, combine the peeled banana, eggs, oats, baking powder and salt.
- Allow to blend until the mixture is as smooth as you want it and blended well. Allow the batter to stand for 10-20 minutes until thickened slightly.
- Heat a non-stick frying pan over medium heat.
- Fry spoonfuls of the batter until golden brown on both sides.
- Serve with fresh fruit of your choice.
